Hi,
If your working with just a couple of drives just about anything will work.
If you have multiple drives over multiple servers than you will need a single 
server to mount them all from and then access this server to make things easier.
In some ways it depends on how your data is laid out. If you have it in just 
flat files in folders and you just wants some access then something running 
https or sftp on the outside is the easiest way to go.
If you have a media server with metadata on your files that keeps track of what 
you have watched / not watched such as plex or iTunes then you will want to use 
these process to control your streams.
They will also have some abilities to scale down the original content to fit 
the screen / bandwidth of your remote connection if you need this.

If your looking for a complete remote network access situation then look at 
something you can use to create a vpn.

In my case I use a vpn to pass all my traffic through my home network as well 
as I can use this to access my machines over ssh / rdp with out having to have 
external port forwards.
For a file server I have a sinology ds415 with a dx513 external enclosure.
Each is loaded with all drive slots filled with raid5.
Inside the boxes I have in the ds415:
4 5 TB 7200 drives.
Dx513 5 4 TB 5400 drives.
There is a slower bus speed using the enclosure so using slower drives is ok. 
You will not see any speed gains by using 7200 rpm drives in the external 
enclosure like you will with the nas itself.
In each box I have the ability to lose one drive with out losing data until I 
replace the drive.

I may install Debian to use on a raspberry pi and connect to a big hard drive.
I have also thought of preparing my 2011 mac mini to act as a file server of
