Hi,

What device are you sending the AirPlay to?  For fun, I just sent to a Apple TV 
2 and the VoiceOver sound remained on my computer.  It's possible that when 
AirPlaying to such devices from the Mac, you are sending both the audio and 
video signal to the device.  If so, that is possibly why it is limited.  You 
should be able to keep VO on your computer by making sure that VO is set to 
Built-in audio in the Sound pane of the VO Utility.  You can change the System 
audio in System Prefs, but this normally should not affect the VO audio.  I 
believe that iTunes has extra encoding to allow for sending to multiple AirPlay 
devices, but I don't believe that is the case for regular screen mirroring of 
the Mac.
