Then hold down alt option to bring up the pause button
you should? then be able to select the pause button in the usual way.
Unfortunately the directions for resuming recording indicate choosing the red
button, which I hope is labeled somehow.

"how to pause and resume recording in quicktime?"
One result refers to pausing with the details there.
