You might take a look at Metakine's DVDRemaster Pro ($49.95). I'm afraid I can't give you much information about this product, but it's been extensively discussed on the mac-access list where there are some people who are very interested in DVD ripping. A year ago one of the members posted asking for an alternative to handbrake, which he found very slow, and I responded with a link to a review of this product from MacApper that mentioned that it ripped their trial movie three times faster than handbrake. The list member really liked this program because it was nearly 100 per cent accessible at the start and the developer responded to his requests for further improvements. There's a regular version of the app that's $10 cheaper, but which won't separately extract the audio. The main criticism I've seen of this product is that, while it does a great job, the help documentation is decidedly sparse. Again, since I haven't used this myself, you should take all this as hearsay evidence for a possible product to investigate. I know there are some mac-access list subscribers who participated in those discussions that are also on this list, so maybe you'll get a more knowledgeable response. Alternatively, you could just join the mac-access list yourself and ask about this product and its usage.

Also, I'm not sure whether DVDRemaster Pro can convert directly to mp3. I think it may default to mp4, because mp3 files have no extension for separate video and audio support, whereas an mp4 track can contain either audio, video, or both. Hence, a program that can extract either audio or video separately, would not be set up to work with mp3 files by default.
