Hi,

Actually, if all you’re doing is playing music or other media, then going 
through System Preferences is not the best choice.  Instead, in the Music app, 
you’ll find an AirPlay button.  All devices that support AirPlay and some 
Bluetooth devices will be listed there.  You can select one or more from there 
and the music will begin playing through the selected device.  VoiceOver will 
remain going through the Mac speakers.

You can use media volume, or cmd-up/down within the Music app to control 
volume.  One limitation is that for devices that are not HomePods or HomePod 
Minis, the maximum volume is what the current volume of that device is set to.  
So, if you want it to be louder, you may need to adjust the volume of that 
sounc bar etc with it’s remote.

This process is also available through the TV app if you wish to push the audio 
from your movie or TV show over to a sound bar or set of HomePods.
