A friend of mine in Canada, runs an Internet radio station, using a 2009 Mac
pro running macOS 10.13, High Sierra. His radio station runs fine, 24 hours a
day, 365 days a year. He never reboots the Mac and it runs like a champ on the
old OS.
That being said, your 2015 Mac book air should run just fine for a long time on
macOS Monterey.

It just means you will be on Monterey. If it does what you need, it isn’t dead

because their favorite applications are old.

No, it just means your Mac has reached the 7 year cycle for new upgrades.
You can still use it as always.
