The option frequently mentioned is ABBYY FineReader for Mac. I haven’t used it, and there may be alternatives now. I have used the Windows version (a former colleague arranged for my then workplace to acquire it, which is how I was introduced to it). The document format recognition is very good, as is the OCR accuracy. I used it mostly to process PDF files containing images of printed pages.
