I was suggesting the Simplenote app as an alternative to the default Notes app for the iPhone. However, you should be able to sync Notes when you connect your iPhone to your Mac or PC through iTunes. For Mac users, this is done through the Notes capability of Apple Mail. In your Mail app, you could bring up item chooser menu (VO-I), find the "Note" button in the tool bar, and press it (VO-Space) to create a new note, or you could simply use the shortcut keys Control-Command-N to create a new note. The sidebar of Mail lets you navigate to and select "Reminders", as well as "Mailboxes", and the Notes show up under this category. I believe this only syncs with your iPhone if you have that box option checked on the "Info" tab for your device when it's connected. Also, your notes changes on your iPhone won't be updated to change the same note under the Notes category of Mail unless you you have this configured in the additional Advanced options category of the "Info" tab when your iPhone is connected. I haven't tried this myself, so I don't know that these statements are accurate.

This process is also different if you have a MobileMe account, and have set up your iPhone to sync Notes in your MobileMe preferences pane. In that case, your Notes will sync without a USB connection. This is getting beyond my scope of knowledge or experimentation. I usually use the default Notes app on the iPod Touch without syncing. If I want the content on my Mac, I'll copy and paste it into Simplenote, then access it through Notational Velocity.

The limitations of the default Notes app are: (1) unless you have a MobileMe account, and have also configured it to sync Notes, you can only update Notes between your computer and your iPhone or iPod Touch when you connect your device via USB cable to iTunes. Even then, you must have the boxes checked on the Info tab. Your amended notes won't be sent back to the Mail app unless you also configure this in the Advanced options of the Info tab. (2) If you are a Windows user, you won't be able to sync your notes between your iPhone/iPod Touch and your computer at all unless you have bought Office. (3) version update issues have to be separately handled.

The free Simplenote app by Codality works extremely well, and provides a searchable interface either through a web account or through a desktop client. Notational Velocity also supports tags, for faster searching/sorting. This will be updated in upcoming versions of Simplenote. In addition, your versions are kept updated and current from all access points: the iPhone app, your desktop client, and the web Simplenote interface. Again, the most detailed discussions about this app have been on the mac-access list, but this should get you started.
