Ian,
Did not hear anything about headers. Only have a summarize button, which dows
not do it. Interacting with your name in the message you sent only announces
“text”. Something is not right with my view or Voiceover settings.

With your email open, I used VO+Left until I got to the headers where your name
was announced.
Then, I interacted with the headers and used VO+Right to get to the Details
button.
Once the button was pressed, I used VO+left to go back to your name where the
To and From info was shown.
The Details button changes to a Hide button.
