I don’t think you can do this with QuickTime player alone.
You need an input source that is able to listen to VoiceOver, and then record 
it.

I think the easiest, and least expensive way to do this on a Mac, is by using 
the Zoom desktop client.
Simply start a meeting in your personal Zoom room, then initiate Screen 
Sharing, and share your computer’s audio.
Once you have this going, start a local recording, which should capture 
VoiceOver, and any other audio from your Mac.
