Amazing that the Mac Operating System and User Interface are so very different
from iOS, even though they come from the same company.
I often use iOS when available to do web-based activities, or where there is a
specific iOS app. Much easier to use than web-based activities on the Mac. And
I found long ago that many apps for iOS are not at all available for the Mac —
who would have thought!
But I agree the Mac is a very nice machine, and once accustomed the user
interface is just as smooth as for Windoes.

I hope you like the bugs in VoiceOver for your iPhone, because there are plenty
more of those where they came from for the Mac. And Mac is the less popular
platform, so you can generally expect them to be more irritating and take
longer to get fixed.
But, yes, all that stuff works on macOS. I'd consider keeping a free VM running
Windows on hand, just in case, especially for certain web apps, or the Office
applications where the scripts simply provide superior accessibility. But the
experience of macOS today rivals the best era of Windows accessibility, say the
mid-2000s, in its relative simplicity compared to modern-day Doze, whilst being
up-to-date and capable of running much useful software that Windows users would
ultimately need iOS to use, even assuming it's available for Windows. The indie
scene of commercial macOS development often means you actually get the kind of
care and attention for your accessibility issues that is simply not available
elsewhere, so while you do have to put up with Apple's incompetence you are
also often getting a premium experience for certain apps and tools.
So yes, go to it, and have fun. Just don't expect it to be exactly like your
iPhone or iPad, because it's not.
