It depends on whether you want to be mostly stationary with your IPad or 
IPhone, or mostly mobile.

If you have been used to sitting in one spot with a desktop computer in front 
of you, the mobile possibilities may not seem readily beneficial.  But, once 
you try untetheredness, and mobility, including all access to the whole array 
of apps and features outside your house, at a coffee shop, on the bus, while 
waiting at an appointment, you will not want to go back.

This means that any keyboard you get has to be set up for mobility.

The Apple Bluetooth keyboard is very usable and portable.  It can't fit into a 
pocket, unless you have a gugantic pocket, such as an apron sized one.  But, it 
can fit into a computer bag or backpack.

Other Bluetooth keyboards are folding, smaller, but may not be as easy to keep 
paired or type on.

The Doc for the IPad would be mostly for stationary use, at least, I think so.

You'll have to take a visit to stores, if possible, or meet with other blind or 
sighted users and play with the interfaces to test out which you prefer.
