HI Shawn, If you're still looking at reading uninerrupted on the Mac, I'd suggest breaking up the document into smaller sections. I do know that you can bookmark things in Preview and come back to them. This has worked for me before.
Outside that, I'm not sure if anyone else on the list has a better idea. This would be good to know, as I have several long documents I'd like to read without having to continually press VO-A to read all.
