Hi Scott, Which version of Time Capsule do you have? The Simultaneous Dual Bandwidth one transmits both a 5GHz and 2.4 GHz signal simultaneously whereas the older version can only transmit either/or. The Airport Express is similar to the latter, whereby it can only transmit either/or.
If using the newer Simultaneous Dual Bandwidth version, the Airport Express will automatically connect using the 2.4 GHz band when extending with an Airport Express as long as you haven't modified it's original settings. If you're using the older version, you will need to leave it on 2.4 GHz as the extending process only works properly on that band. Hope this makes some sort of sense.
