I haven't tried scanning software much on the mac as yet. I know that when I was playing with a trial of Iris, it had a utility that converted a pdf to OCR text. I think they may even have this as a separate utility. It would be great to have this as a feature of scanning software, similar to Kurzweil's Kesi Virtual Printer.
