Another thought: you said all software is up to date.  Does that mean you've 
already applied the recent 10.6.8 software update (released about 3 days ago)?  
I was going to suggest applying this update and seeing whether your problem 
with the runaway "applespell.service" process went away, since your issues 
might have started with the 10.6.7 release a few months ago.  A Google search 
turned up one similar complaint in the Apple Support forums 
("AppleSpell.service is keeps draining 99% of my CPU" posted at the end of 
April, with no responses).  If that doesn't sort things, since you've already 
tried all the recommended actions about using Activity Monitor, checking that 
your software is up to date, and repairing permissions, then I'd suggest trying 
to get the 10.6.8 combo updater from:
http://support.apple.com/kb/DL1399
Probably not needed unless you have already applied the regular 10.6.8 update 
and are still having recurrent problems with runaway CPU.  Apart from that, 
just try keeping a record of when this happens with your screenshots to send to 
Apple.  They may ask you to send in your console logs if this keeps happening.
