I myself am trying to add phone numbers I have saved on Skype,
since I have the plan to call landlines and mobile phones. Has
anyone else figured out how to get the people with phone numbers
to show up along with the online contacts?

I've had a look around Skype!
You can just have the online contacts showing without the offline
ones!
But You'll have to change from Skype tab to Address tab for your
phone contacts!
I could not see any way to have both at the same time!
To get the Skype contacts online only press the contacts monitor
button!
