Hi Georges,
Can you be a bit more specific about what exactly you're doing?  iTunes should 
not, in my experience, come up automatically unless you open it first.  As for 
it not wanting to quit, I've never encountered this particular problem before, 
though it does occasionally claim to be busy while some processing happens in 
the background.  Perhaps your Create Library dialog is still open, I'm not 
sure.  Without knowing more about your situation, I can't really speculate.
