Hi,

I'll let Apple do the explaining for this one.  It will save typing.

• When in Pages, go up to the Help menu and choose Pages Help.
• Type Header into the Search field.
• Of the 13 items that will appear, click on the using Headers and Footers.
• She can read that and within that section, there is a link for Changing 
Headers within Sections.

She will be using the Inspector to do this but from everything that I've read, 
it should do what you're asking.
