1. Run without a monitor: it is doable, but VO will not automatically
start. I have not experienced the system preferences not saving that
another lister described. I bought my Mini last week and updated to
10.7.1, so it should be the same type you will get.

2. Use iTouch as trackpad: this is also doable, but not, to my
knowledge, in an accessible way. I contacted the developer of one such
app, the most popular one I could find, to ask just that question and
was told that accessibility is on the list for a future update but is
not there yet.
3. Show mac screen on iTouch: It looks like this is also possible, but
no word on accessibility. A common app, from a quick google search,
seems to be Team Viewer.
