Actually, I need to do a bit more checking. I do notice that even though VO comes up on my logon screen, often I have to turn it back on once I reach the desktop. And even though I don't have it connected to a monitor, I do have a cable connected. jAlso, the server version isn't really different from the standard version. I got a doc from Apple describing how to revert to a standard version, and basically, if you haven't set up networking, which I have not, the first and only step is to delete the server icon from the dock.

For me, this has fixed the issues I was having and I am happily using my Mini without a monitor.
