That's where Apple needs some work in seamlessness. The only way I know how to access documents that I've got on the iDevice is to send it back to the Mac through iTunes. The iOS version is not accessible to the Mac version of Numbers at all. Maybe, in the next version of iWork, they will address this shortcoming.
