Hi Becky,

        My recommendation would be list recorder.  You could do your to do 
lists as either recordings or as a text list as List Recorder does both.  It 
also now has do dates available.  I suspect you might find it useful in 
additional ways for your classes.  I use List recorder to organize everything 
from recorded lectures and meetings to lists of groceries.  The app is about 
$10.00 and is not only voice Over friendly but designed with voice over as a 
priority. 

I use this app a lot and it has the priority spot in my dock.
