I find with gmail and IMAP, the best way to "Delete" messages for good is to Move them to Trash while in a mail client. Yes, there is a delete function on the web site which actually deletes messages (if trueth be known, it moves them to trash too). Anyway, that's what I do in mutt, thunderbird, mail app on both mac and iPod.
