I don't have a direct answer for you, but here's a suggestion on how to locate 
the preference file you want.  Open up a Finder window and use the 
Command-Shift-G "Go to folder" shortcut, then type or paste in the location of 
the Library/Preferences folder for your account:
~/Library/Preferences
Have this set to view as list (Command-2), interact, then navigate to the "Date 
Modified" column and sort (VO-Shift-Backslash) so that you can view the most 
recently modified preference file.  

Then, go and set up a new custom gesture.  After you do it, Command-tab back to 
your Finder window display of preferences, and check which were the most 
recently modified files (there might be more than one).  

This was the method I used to find out that the different keyboard language 
setups were saved in a file named "com.apple.HIToolbox.plist" -- something that 
I would never have guessed.  The acronym stands for "Human Interface Toolbox".

Also, if you're paranoid about wanting to keep copies of your most recently 
modified plists, using the sort by modified date and copying the most recent 50 
or so may help if you want to track corrupted plists at a later time.  I used 
to periodically keep a few saved plists just in case I wanted to track down odd 
account behavior changes.  They don't take much room, but this ensures that I 
get the ones that are being modified by my actions -- whether I know  their 
names or not.
