Hi Dean, There's the "Mute" button is on the F10 key. I toggle this on and off by pressing FN+F10, but that's because under System Preferences > Keyboard on the Keyboard tab I have the box checked for "Use all F1, F2, etc. keys as standard function keys". If this box is not checked, you would just press the F10 key by itself to toggle muting on and off.
Alternatively, just pressing the key to raise volume (FN+F12, or F12) will also undo muting. There is a way to assign a key to the "Mute VoiceOver Toggle" command, but I don't think there is any keyboard shortcut set by default to that. It would be too devastating to come across this by accident. HTH.
