I accidentally replied to the blank email that was sent and no longer have Lindsay's actual email, so this is in response to a question about converting pdfs with Abbyy FineReader Express.

I'm not sure whether this is what you are looking for, but at least when I scan and process from a scanner, there is a "save" dialog that allows me to save as text or rtf. I'm assuming you would get the same dialog when doing a pdf. Also, if these are readable pdfs, you can put them in preview, select all, copy into text edit and then change them to plain text if you want.

Finally, you could use calibre to convert pdfs to text. It isn't accessible from the app on the Mac but there is a command you can do for Terminal to convert a file.
