if you put it up to 2gb, you could put Lion on it but not Mountain Lion. Then 
you can just use it as an extra. I have a mid-2007 one myself but it has a 
problem with not always wanting to start; I may break down and get the logic 
board replaced because I have a friend who really needs a computer. I know 
before Mountain Lion came out people were looking for computers that would run 
Snow Leopard but Mountain Lion probably alleviated that somewhat. I read an 
article though that warned of the dangers of running old OSes once there aren't 
any more security updates.
I hate letting go of old computers; I always try to find something to do with 
them. I have two old Thinkpad T23s and a Thinkpad t61 sitting here running 
linux and yes, you could run linux on your mini. It always seems sort of wrong 
to me to get rid of a machine that is still working so I either keep using them 
or I try to find homes for them with people who understand that they are 
already very used and there are no guarantees.
