That's right; you don't uncheck the box to keep your files organized. Either you have to find another editor to do this or you select groups of tracks and apply the composer change to all of them at once; you get a prompt from iTunes wanting to know if you really want to work on multiple tracks but it works fine and your files and albums are reorganized as you do this.
