If you want to, you can make ITunes a little more navigable by showing the 
sidebar with command-option-s. This will make it behave as it did in previous 
versions, with the source list and tables.

You can then find your device in the sources list, and then press command-e to 
eject it.

You have to be in the music area for the hotkeys to work. Again, if you want, 
you can go there with the sidebar showing. Also, instead of the album grid, you 
can select the songs radio button, and this makes things a bit easier to 
navigate as well.
