One thing that I have actually needed to do a few times which is slightly
different from what Harry's trying to do is to change the background! color,
not the text color. Apple is telling me in Pages there really is no easy
way to do this. They said the only way really is to insert a shape, say, a
rectangle, then fill it with a certain color shading. Then, type within
that rectangular box that you shaded. The only issue is, they said if you
start typing, that box won't stretch automatically to fill your text. So
say your box is only 40 characters long horizontally left to right, by say,
5 characters virtically going down. So, if you run outside the marginal
bounderies of that box, it won't stretch to compensate. You'd literally,
they say, have to then take the mouse, grab one of the little handles of the
box, and drag/stretch it to fit around the text. Is there a more easier way
to go about doing this that maybe they're missing?

Actually, it is just the same in Pages, and in every other text editing
application I've used. Cmd-Shift-c opens the colour palettes.
