Hello Erik, First of all, there is no automatic language-switching on the Mac. However, it's very quick to switch voices with VO-Cmd-Down Arrow. I do this uncountable times every day between English and French.
To switch everything at once (speech, keyboard, Braille and any other settings) the best way is to set up appropriate activities.
