I'd also recommend Googling MacWorld and TidBits articles on making gmail work with Apple Mail. Take Control of Mail is also a great book in this regard. Gmail IMAP works differently to regular IMAP, and so takes some tweaking to work properly with Apple Mail. I'd love to help you but there are so many variables it's a bit hard to check them all via email.
