Alex, Do you have All Mail enabled for IMAP in Gmail settings? And around how many messages do you have in All Mail? Some people have found that limiting the size of IMAP folders in gmail has helped the issues. It's not something I want to do or something anyone should have to do but it might help if you have a huge number of messages.
