Alex, You need to go to Finder.

1. In the sidepanel, find Time Machine backups.Do not open in side panel.
2. vo + j to backups.backup
3. Open backups.backup
4. Open the next folder.
5. Then you should see backups with  dates.
To see dates more closely hit shift-vo + down arrow to interact with the dates.

You can browse in theese like you normally do in Finder. Show info
about documents and programs and music. Do only copy non programs i.e.
apps. No apps. Just the rest you want.

You need to be logged in to Time Capsule to see Time Machine in
finder. If you do not see Time Machine backups, you need to restart
Finder by hitting vo - command + home and hit vo + space. Then hit
command + n for a new Finder window.

You may also need to select share disk in Airport Time Capsule,
