I agree that changing custom headers should be simpler than the current
way but, just in case, you can press Ctrl-H and enter your Reply-To header
in the dialog (don't check "Save" if you don't want it to be remembered).
The UI is lame, of course, but I don't really know where can we put the
custom headers in the composer... One idea was to use a notebook with all
custom headers on its second page but I don't like it that much. Another
was to allow editing the headers with the message -- this one is better
IMHO but could be really confusing.
