ok, this is getting interesting (and mildly frustrating). I can't find
AutomaticSpellingCorrection in the plist file. I *can* find

When I manually wrote this to false after quitting Mailmate, then saved,
and restarted Mailmate, it *returned to true* on its own.
I don't have a machine with a single start-up disk to test this further.
This value is used to
call `setAutomaticSpellingCorrectionEnabled:` on the text field in
the composer. It's difficult to see what could go wrong and it works
for me (although still on Lion).
This may be because I have my home directory on a separate drive but
even though it's switched off in the prefs, it is true (I just opened
the file in BBEdit). I'll manually set it to false there and save and
see what happens (eg if it reverts).
