That would work. You can still use the SMTP server of Gmail (and your Gmail address) although with the side-effect of Google putting a copy of the sent emails in the Gmail sent mailbox (a non-standard “feature” of Gmail).

Not sure what you mean by that, but you can certainly move existing emails from the Gmail IMAP account to your alternative IMAP account using MailMate (and then remove the Gmail account from MailMate).

(One caveat when using forwarding is that you cannot see when/if Gmail is down.)
