I've tried turning it off system-wide; I'll see if it helps, though for all I know I have
to restart MailMate after doing that.

I don't think Apple allows it to be disabled like that any longer, but I believe I've solved the problem within MailMate now. Hold down ⌥ when clicking “Check Now” in the Software Update preferences pane to get a test release.

Installed 6130; I'll see what happens. (I was expecting to see the setting in the
app options—is that only for releases prior to Mojave?)

As a followup: this did completely solve my problem.
