Benny can explain that better but as far as I know, the junk state is
kept as the IMAP tag attached to the message. You may want to display
column “Raw tags” to see these.

under a threshold, but I want to reset whatever Spam Sieve did.
If I have to reconfigure Mailmate form scratch, that's fine, but I
also don't know where it keeps this "Not Junk" setting (and I hope it
doesn't modify the emails themselves by attaching headers).

To change the status, there is an item under the Message menu called
Junk State.

How can I start with an install that has no emails marked as "Not
Junk"? Where is this information persisted? How can I delete it?
