I've viewed the raw messages to try to figure out what prompts this kind of display, but I only see an @ symbol.

This is something that MailMate does to help users detect @ symbols in the name part of an address header, which is one simple pattern of email spoofing. This blog post by Benny explains more:

Quoting from the post:

In the most recent test release of MailMate I’ve added the following improvement: Whenever the name part of an address header contains a @ then it’s replaced with a skull (💀). That should at least make the user aware of simple attempts to spoof an address header.
