See and add to ticket no. 2210 (<https://freron.lighthouseapp.com/projects/58672-mailmate/tickets/2210>). I've missed this behaviour since migrating from Mailsmith.

This is really quite simple: Preferences->Composer->Rich Text (HTML): "Markup syntax: none"

You will still have a pull-down in the composer window pull-down where you can switch to Markdown if you want it but it will default to plain text.

Also: uncheck "Generate HTML even if only for styling" because that *WILL* generate HTML, even if only for styling. Really.
