Excellent work, Phil! I wonder if there's some way to document what needs to be done when it needs adjusting due to Google adding or replacing classes. Or maybe starting a separate special interest group of Mailplane themes. Or something. It seems to me that we could take the current style sheet you've done and list all the classes. And then list all the classes spewed in the html generated by gmail's html. That way we could compare and contrast when things get added or removed. I'm happy to do the work in creating the list set up if it helps the cause.
