Regarding your question about the time evolution of Portuguese
building forts in Portugal, and in what is now Morocco and India,
Fundação Calouste Gulbenkian just published 3 amazing volumes making
an inventory of Portuguese origin patrimony across the globe. You can
buy then here:

The link above is for the North Africa and Persian Gulf Portuguese
Forts and other monuments. It has about 600 pages and the 2 other
volumes are also equally heavy - focusing on Asia and South America.
So maybe these volumes may contain chronological or other information
that is useful for you, given that it is the first systematic attempt
to catalog all the vast Portuguese patrimony in the world.
I think they are written in Portuguese only.
