Good morning Ethan

the quick and dirty method used to shift centroids in Gridmaker grids (from
one of the nodes to the centre) may work for you too...
once you have reshaped your polygon, convert it to polylines and then back
to a polygon - and hey presto centroid where you expect it

Give it a try
