Tom, Here is the answer to your first question. When you go to labeler your layer, choose an expression instead of a field and use this: Format$(CentroidX(Object), "#.########")+Chr$(13)+Format$(CentroidY(Object), "#.########"). The #.##### takes the decimal out as far as you like.
As far as your second question goes I think you can set default styles, but cannot remember at this time. Good luck!
