Ian, 

sounds to me like you want to use back interpolation,, or as VM calls it
'Point inspection', you'll find it under 'analyse' on the grid manager
dialog.... (it is THE reason to buy and use Mi & VM as far as i am
concerned!)  point to note, it will backinterpolate all grids at once, so if
you only want the 'altitude' grid close all other grids down.

Does anyone know how to return the altitude from vertical mapper to MapInfo.

I have about 30,000 points that I need altitudes for.  I have a Vertical
Mapper grid that covers the area.  Can I run a query to update my Z value
for my points getting the data from the VM Grid?
