I remember having to do this before...

If your dataset range is 253ft - 1096ft (for example), set your lowest
contour interval to 250ft and your highest to 1100ft, then set your interval
to what ever you like (10, 25, 50, 100, etc.) and away you go.

If you are creating 500 ft intervals, then set the minimum to 0 ft and the
maximum to 1500 ft.
