I work for a state health department - we use census data routinely, and I think I can take some of the credit for that. Before introducing the agency to GIS census data was not used hardly at all. The items we routinely use, almost any population number, especially minority distribution. We do a lot with SES variables as well to characterize neighborhoods where disease rates are high (and low for that matter) We also use the language spoken numbers to guide us in developing neighborhood specific public health documents.
