... as for the credentials to connect to the matterhorn server we use
those identified in config.properties on the admin-machine with the
property names:
org.opencastproject.security.digest.pass=CHANGE_ME
org.opencastproject.security.digest.user=matterhorn_system_account
ie. we set the same credentials on the capture agent's
config.properties.
Dunno if this applies to the nCast-thingies though.

User management in Matterhorn currently assumes some outside service like
CAS or LDAP. There is a Users tab available where one can edit roles, but
addition/deletion of users on this page is not implemented.
Second, I'm trying to connect a NCast PR-720-M capture device to the
Matterhorn servers. This capture device is sold to work with matterhorn. I
did copy the default capture agent config file (cp
/opt/matterhorn/felix/load/org.opencastproject.capture.agent-demo.cfg
/opt/matterhorn/felix/load/org.opencastproject.capture.agent-ncast.cfg) and
did change the connection details in this server. In the capture client
configuration interface, I have to provide a username and a password for
connecting to the Matterhorn server, but I don't know where to set this in
Matterhorn. Could you please tell me where I can set these credentials in
Matterhorn so that my capture device is able to connect?
No configuration of Capture Agents needs to be done on the Server. They
simply log in with their credentials and say "Hello, I'm here" to the
server using the REST API's.
